History

Steve and Tricia Stanley opened the first Café Rio in St. George, Utah in 1997. Their idea was to share delicious meals that are inspired by traditional cooking techniques of Northern Mexico, Southern Texas and New Mexico. The Stanleys managed to open six restaurants in Utah and in 2004 they sold the company to Bob and Kathleen Neilsen. With the goal to expand the brand throughout the country, they began opening new locations to nearby states, gaining more patrons in each of their locations. With over 15 years in the food business, the company remains committed in serving fresh, tasty and delectable Mexican-inspired meals that are always made from scratch in-store.
